Level up your breakfast with a delicious and healthy yogurt parfait! A parfait is only as good as the ingredients you use, and this one is made with some favorites from the market.

I love using baked OatMEAL Cups as the layers In this breakfast parfait because they’re packed with superfoods and fiber. Layering them with a thick, rich yogurt like the plain yogurt from Calf and Clover Creamery makes it luscious and adds protein. Top with fruits and berries that are in season, and drizzle with some raw local honey from The Bee Love Project. You can’t beat this for a filling and delicious breakfast!

Yields 1 parfait

2 baked OatMEAL Cups from Stylish
Spoon (I like to use the blueberry + chia or mixed berry flavors)
2/3 cup plain yogurt from Calf and Clover Creamery (or a non-dairy yogurt, if needed)
1/2 cup berries or other cut seasonal fruit
1 tsp. raw honey from The Bee Love Project, optional

1    Place 1 baked OatMEAL Cup in the bottom of a low, clear glass. Top with 1/3 cup plain yogurt. Sprinkle with 1/4 cup berries or cut up fruit. Drizzle with honey if using.
2    Repeat the layers, starting with the OatMEAL Cup, yogurt, berries and top with a final drizzle of honey. Parfait can be made the night before, stored in the fridge and served in the morning.

Until the WFM opens again in May, you can find Stylish Spoon’s baked OatMEAL Cups online at stylishspoon.com/order, at Local to Market on Main Street, or at The Granola Bar of Westport.
