Ingredients

1 Green apple peeled and cut into small 1/2 cm squares (small)

1 tablespoon lemon juice

1 tablespoon granulated sugar

½ teaspoon ground cinnamon

⅛ teaspoon ground nutmeg

dash of allspice

½ cup caramel bits

1 package oif empanada discs

1 egg lightly beaten

Instructions

Preheat oven to 425°F.

Line cookie sheet with parchment paper.

Toss apples with lemon juice, add sugar, spices, and caramel bits. 

Display dough discs and put a spoonful of tossed apple in center of each disc.  

Gently fold the dough to make a semicircle, press gently to seal. With a fork gently press the edges to crimp shut.

Brush the tops of the empanadas with egg and sprinkle with cinnamon sugar if desired.

Bake for 12-14 minutes or until golden brown and let cool slightly.

Tips:

Refrigerate for 20 minutes before baking to allow up the dough and filling to keep everything inside as they bake. You can also make ahead of time and freeze. Don’t defrost when ready to bake. Straight to preheated oven!

How to make cinnamon sugar? Mix ½ cup sugar with 2 tablespoons ground cinnamon in a small bowl.
