Chicken, Basil and Feta Burgers with Tzaziki, by Samantha Yanks of The Connecticut Edit

This Chicken, Basil and Feta Burger recipe by Samantha Yanks of The Connecticut Edit is a fresh change from traditional beef burgers and is best when made with seasonal ingredients, basil in the Spring/Summer, spinach in the Fall/Winter.

BURGER INGREDIENTS

  • Ground chicken: Two pounds of extra-lean ground chicken.
  • Egg: One egg, beaten, adds moisture and helps bind the chicken patties together.
  • Garlic: 2 tablespoons, finely minced. Sauté in butter first, then let cool and add to the mixture.
  • Basil: 1 cup chopped
  • Crumbled Feta: 1/3 Cup
  • Seasonings: Salt, pepper and onion powder to taste.
  • EVOO: Cook the chicken burger patties in olive oil on the stove.

BURGER DIRECTIONS

  • Mix the chicken, basil, feta, egg, garlic, and seasonings in a bowl.
  • Shape the mixture into even oval-shaped patties.
  • Cook the patties on the stovetop in the EVOO until they are deeply brown on both sides, approximately 8 to 10 minutes before turning.

Then cook 8 to 10 more minutes, until the burgers are done. The meat should be cooked through and no longer pink in the center.

Serve with Tzaziki and a Cucumber and Tomato Salad

TZAZIKI INGREDIENTS

  • Cucumbers: 1 cup, grated
  • Greek Yogurt: 2cups, plain whole-milk
  • Dill: 2tablespoons, finely chopped
  • Lemon Juice: 1tablespoon
  • Garlic: 1 clove, minced
  • Seasonings: Salt and pepper to taste

TZAZIKI DIRECTIONS

  • Grate cucumbers using the large holes.
  • Squeeze the grated cucumbers by hand or with a cheese cloth to remove excess water.
  • Place cucumbers in a medium bowl for mixing.
  • Add yogurt, dill, lemon juice and garlic.
  • Season with salt and pepper to taste.
  • Mix well

CUCUMBER AND TOMATO SALAD INGREDIENTS

  • Cucumbers: Sliced
  • Sungold Cherry Tomatoes (in season) or any cherry tomatoes: Sliced EVOO
  • Seasonings: Salt flakes and fresh ground pepper to taste


CUCUMBER AND TOMATO SALAD DIRECTIONS

Toss in a bowl and serve.
