Who are you?
I’m Sue Smith, a Certified Health Counselor and founder of Prime Health Style. I create sustainable wellness programs for individuals and groups.
Why are you a part of the local food community?
I was a big fan of the Westport Farmers’ Market long before I became a member of the board. All the fresh, local produce makes for healthy meals that are at their peak in flavor. And my love for the WFM has influenced both my clients and friends in a positive way.
Why do you support the WFM?
I stand with the market because it supports our community, our farmers, and the environment. It encourages more organic, pesticide-free practices, and reduces packaging as well as food miles, resulting in less vehicle pollution and fossil fuel use.
What’s the freshest thing in your kitchen right now?
Basil – it was just picked from a big pot on our terrace outside the kitchen door.
If you could become a vegetable, which would you choose?
A green pole bean might be nice. It’s nutrient-dense, loves the sun, has pretty flowers, and is low-maintenance. There’s a sense of adventure, too, as it grows tall on a vine. An added plus is that green beans are delicious consumed raw – I’d have a chance of escaping the hot pan or oven!
